Start by chilling your cocktail glass with some ice and water.
While letting that sit, combine your spirits and ample ice in a large mixing glass. Stir, don't shake, until the glass begins to cloud.
Empty the ice from your cocktail glass, strain into it, and garnish with a maraschino cherry.

The Bijou, meaning "jewel" in French, combines the colors of three jewels: gin for diamond, vermouth for ruby, and chartreuse for emerald.
